Blueberry and Granola breakfast popsicles

The person who says that you can’t have ice-cream for breakfast has not seen or heard of thi Blueberry and Granola breakfast popsicle recipe by Ankie from The Wooden Spoon Kitchen! Ankie is all about fun and healthy breakfast ideas as well as breakfast ideas for kids to enjoy so these fruit popsicles are the perfect thing!

Breakfast has always been my favorite meal of the day, I even opted for a breakfast wedding! So instead of googling breakfast restaurants try this healthy breakfast recipe.

Last week I featured the Turmeric, Pineapple and Mango smoothie recipe that was also a part of our Easter brunch ideas styled shoot. And today I get to share this breakfast with a twist!

Blueberry and Granola ice lollies breakfast recipes (Makes 6)

Blueberry and Granola breakfast lollies recipes

Prep Time15 mins

Ingredients

 150 g blueberries
 250 g greek yogurt
 2 ripe bananas
 1 lemon’s juice or to taste
 2 tbsp honey
 1 tsp vanilla
 100 g granola
 2 tbsp melted honey

Method

1

Mix granola with honey, make sure there are no large pieces of nuts in the granola.

Firmly press into lolly mould with the back of a spoon, only a 1/4 full.

Place all the ingredients in a blender or NUTRiBULLET. Blend until smooth.

Pour into lolly moulds and freeze for at least 4-5 hours.

When you want to serve the ice lollies, rinse the moulds under warm water so they can easily slip out.

To make them last a bit longer before they start melting serve them on ice.
