Baba Ganoush recipe

Baba Ganoush is an incredibly tasty food that comes from the Eastern Mediterranean. It is a go to recipe for entertaining guests or perfect to serve with light lunch. What is Baba Ganoush?

Baba Ganoush is essentially a thick sauce or spread made from pureed aubergines and sesame seeds. (Similar to hummus) It is full of flavour and is a wonderful addition to any tapas meal. It is also wonderful on your favourite pitas or crackers.

Ingredients

 2 Medium - Large Aubergines
 ¼ cup Tahini (sesame paste)
 ¼ cup Lemon Juice
 2 Garlic cloves (finely crushed/minced)
 ¼ tsp ground cumin
 ½ tsp salt
 1 tsp Olive Oil

Method

Preheat your oven to 180C.

Prick your aubergine and put on a baking tray - bake for 30-50 minutes or until the aubergine is soft and cooked through. Remove from the oven and let cool.

Peel the aubergine - you will be left with the beautiful soft flesh.

Place the aubergine with the rest of the ingredients in a blender and blend until smooth.

Sprinkle with chilli flakes and enjoy with a warm pita.
