Get yourself a Choc ‘n Cherry Wedding Cake

I recently stopped by the Choc ‘n Cherry kitchen to interview owner, Corne Engelbrecht over a cup of filter coffee and delicious chocolate whoopie pies. Here with what we chatted about:

How did you decide to open Choc ‘n Cherry?
When I was younger I use to spend hours in the kitchen baking with my grandmother. I would set up a small “shop” in my grandmother’s kitchen. After our scrumptious cookies came out of the oven, my grandfather had to buy tea and cookies from me. I sold my first wedding cake when I was in Grade 12. After finishing my diploma in catering and hospitality I worked full time as a guest house manager for a year and a half. I resigned and started Choc ‘n Cherry.

What services and products does Choc ‘n Cherry offer?

  • Products: We produce a wide range of designer cakes, tartlets, sweet & savoury treats. Wedding cakes, cupcakes, dessert tables, wedding favours and gifts. We also produce children’s cakes, goodie bags, specialized cakes, biscuits and fruit cakes. Our products are made with the best quality ingredients.
  • Services: We deliver and do the setup of the wedding cakes at the venue. We liaise with the wedding coordinator and venue to ensure that everything runs smoothly.

  • What are the new wedding cake trends for 2012/2013?
Dessert tables, cakes with fondant icing, mini cakes and quirky stationary as part of the dessert table.

What advice can you offer to brides on how to choose a wedding cake?

The best option will be for a bride to make an appointment with me to discuss various factors that will determine the best wedding cake to suit her special day. Things to keep in mind are the quantity of guests, menu, decor, the couple’s taste, what time of the year the wedding will be and whether the reception will be held indoors or outdoors.

A three tier wedding cake can be used as part of the dessert.

Cupcakes or Mini Cakes can double as dessert or wedding favours.

Dessert Tables look great with mini cakes, desserts and candy. Your guests can fill personalized paper packets with these awesome treats to take home and enjoy later.

Remember to consult with your venue on their dessert options and if your are allowed to use your wedding cake as the plated dessert. Choose a professional to make your wedding cake, be open to other options and always place your wedding cake somewhere visible at your reception. A wedding cake should be showed off.

Which wedding cake is your favourite to bake?

I enjoy baking almost anything, but the three tier chocolate and vanilla cakes are my favourites. They are special to me, because they are from recipes that I have been using since high school. Decorating a cake is the cherry on top of the baking process.

What is the strangest request you have received so far?

A couple wanted me to decorate a cake that they would have provided, but I would say the strangest request was a “divorce”-cake.

What is the symbolism behind a wedding cake?

The cutting of the cake is the first task as husband and wife. The husband’s hand covering his wife’s hand symbolizes his lifelong devotion to her and the cake that they feed each other also symbolizes lifelong devotion to each other.

What other wedding cake trends can we expect?

Mint green, classic white and pastels are perfect colours for wedding cakes. Cake pops are a trendy feature to have on your dessert table. Cake toppers are a special way to add a personal touch to your wedding cake. There are endless options available, it is up to the couple to decide which cake toppers will present them the best. Fresh flowers or sugared flowers also bring a timeless look to a wedding cake.

Just a kind reminder, remember to have a beautiful cake knife to cut your wedding cake, it will add to the photos as well.
